Reminder of Namibia-date triangles
I have to proudly present you my latest creation which has won me loads and loads of admiration from my boyfriend who said he hasn’t eaten something so scrumptious for a long time. My raw Date triangles are incredibly easy to make, it takes about 5 minutes tops from start to finish, yet they taste heavenly and you can offer them to anyone without explanation that they raw and they’ll be hooked.
Truth be told, the original version, at least the one I had in Namibia-the country with which I fell in love- containes butter, sugar, dates and rice crispies whilst mine does not have any of the bad stuff. It is also vegan, gluten free, allergy free, raw and unbelievably delicious. I mean, if that’s not good enough of a reason for you, what is? Make them and break hearts! Seriously, it’s that good and I bet you already have all that you need in your pantry to get started. So, c’mon, what are you waiting for?
Yummy date triangles
1 Cup dates, pitted and chopped
1/2 Cup raw oats, ground
5 Tablespoons coconut sugar
1/2 Cup coconut flour
1/4 Cup coconut oil, melted
dash of lemon juice
pinch of Himalayan salt
Place all the ingredients except the coconut oil in your food processor. Process till it starts sticking together. Add the coconut oil and briefly pulse to incorporate. Put in a pan covered with clingfilm and pat to even the surface. Place in the fridge to come together a little bit-I left mine overnight in the fridge. Slice into triangles and prepare yourself for the first & unforgettable bite!
